Saffron Butter-Glazed Chicken with Lemon Orzo

This weeknight main channels saffron’s current editorial glow into something cozy, nostalgic, and quietly luxurious: golden chicken, silky butter, and lemony orzo that catches every fragrant thread. The saffron is bloomed in warm stock first, then finished into a glossy pan sauce so the dish feels refined without losing its comfort-food heart.

Method
- Step 1: Warm the chicken stock in a small saucepan until steaming, then add the saffron threads and let them bloom off the heat for 5 minutes. Meanwhile, pat the chicken dry and season both sides with salt and pepper.
- Step 2: Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4 to 5 minutes per side until deeply golden and just cooked through; transfer to a plate and tent loosely with foil.
- Step 3: Lower the heat to medium and add the butter to the same skillet. Stir in the shallot and cook for 2 minutes, then add the garlic and cook for 30 seconds more.
- Step 4: Add the orzo and toast it in the butter for 1 minute, stirring to coat. Pour in the saffron stock, scraping up any browned bits, then simmer uncovered for 8 to 10 minutes, stirring often, until the orzo is tender and glossy.
- Step 5: Stir in lemon zest, half the lemon juice, and the Parmesan. Taste and adjust with more lemon juice if needed. Slice the chicken.
- Step 6: Spoon the saffron orzo onto plates, top with sliced chicken, and finish with parsley and any remaining pan sauce from the skillet.
