Method
- Step 1: Preheat your oven to 400°F (200°C). Slice the baguette into thin, angled slices and place them on a baking sheet. Brush lightly with olive oil and toast in the oven for 8-10 minutes until golden brown.
- Step 2: While the bread is toasting, heat a drizzle of olive oil in a large skillet over medium heat. Add the sausage and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.
- Step 3: In the same skillet, add a tad more oil if needed, then add the shrimp. Cook until pink and cooked through, about 2-3 minutes per side. Remove and set aside with the sausage.
- Step 4: Add minced garlic to the skillet and sauté until fragrant, about 30 seconds. Deglaze the pan with a splash of white wine, scraping up any bits from the bottom.
- Step 5: Reduce heat to low and stir in a splash of cream and a sprinkle of Italian herbs (such as oregano and basil), simmering until the sauce thickens slightly.
- Step 6: Return the shrimp and sausage to the skillet to heat through, coating them in the sauce.
- Step 7: Arrange the toasted baguette slices on a serving platter, topping each with some of the shrimp and sausage mixture. Drizzle any remaining sauce over the crostini.
- Step 8: Serve immediately while hot, garnishing with fresh parsley if desired.
