Method
- Step 1: Heat 1 tablespoon of olive oil in a saucepan over medium heat. Add the shallot and garlic, cooking until fragrant, about 2 minutes.
- Step 2: Add the chopped beets and carrots to the pan, sautéing for 5 minutes. Pour in the white wine and let it reduce by half.
- Step 3: Add 1 cup of water and the thyme. Cover and simmer until the vegetables are tender, about 20 minutes. Remove the thyme sprigs.
- Step 4: Transfer the mixture to a blender, add the heavy cream, and blend until smooth. Season with salt and pepper to taste.
- Step 5: Pat the seabass fillets dry with paper towels. Season both sides with salt and pepper.
- Step 6: Heat the remaining olive oil and butter in a large skillet over medium-high heat. Place the seabass fillets skin-side down and cook for 4-5 minutes until the skin is crispy.
- Step 7: Carefully flip the fillets and cook for another 2-3 minutes until the fish is cooked through and flakes easily.
- Step 8: To serve, spread the beet and carrot purée on each plate, place the seabass fillet on top, and garnish with microgreens.
