Method
- Step 1: In a small bowl, soak saffron in 2 tbsp of warm water and set aside.
- Step 2: In a large mixing bowl, combine coconut milk, saffron water, and 1 tbsp of soy sauce. Add chicken breasts, coating them well. Marinate for at least 30 minutes.
- Step 3: Meanwhile, prepare the reduction by blending pineapple juice, freshly grated ginger, minced garlic, honey, 1 tbsp soy sauce, rice vinegar, and a pinch of red chili flakes.
- Step 4: In a medium saucepan, simmer the pineapple mixture over medium heat until it reduces by half and thickens, about 15 minutes.
- Step 5: Heat a skillet over medium-high heat. Remove chicken from marinade and sear both sides until golden brown and cooked through, about 6 minutes per side.
- Step 6: Drizzle the ginger-pineapple reduction over the chicken, garnish with chopped cilantro, black sesame seeds, and lime wedges.
- Step 7: Serve immediately with a side of steamed jasmine rice or quinoa.
