Method

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and pepper.
  3. Step 3: Place the duck breasts skin-side down in a cold oven-safe skillet. Turn the heat to medium and cook until the skin is crispy and the fat has rendered, about 6-8 minutes.
  4. Step 4: Transfer the skillet to the oven and roast for about 6-8 minutes, or until the internal temperature reaches 135°F (57°C) for medium-rare.
  5. Step 5: Remove the duck from the skillet and let it rest on a cutting board, tented with foil.
  6. Step 6: In the same skillet, add cherries, balsamic vinegar, and honey. Simmer until the sauce thickens, about 5 minutes. Stir in butter until melted and smooth.
  7. Step 7: Slice the duck breasts and drizzle with cherry-balsamic reduction. Garnish with fresh thyme.
